【摘要】:ThisInternationalStandarddescribesaprocedurefordeterminingwhetheraperceptiblesensorydifferenceorsimilarityexistsbetweensamplesoftwoproducts.Themethodisaforced-choiceprocedure.Themethodisapplicablewhetheradifferenceexistsinasinglesensoryattributeorinseveralattributes.Themethodisstatisticallylessefficientthanthetriangletest(describedinISO4120)butiseasiertoperformbytheassessors.Themethodisapplicableevenwhenthenatureofthedifferenceisunknown[i.e.itdeterminesneitherthesizenorthedirectionofdifferencebetweensamples,noristhereanyindicationoftheattribute(s)responsibleforthedifference].Themethodisapplicableonlyiftheproductsarefairlyhomogeneous.Themethodiseffectivefora)determiningthat—eitheraperceptibledifferenceresults(duo-triotestingfordifference),or—aperceptibledifferencedoesnotresult(duo-triotestingforsimilarity)when,forexample,achangeismadeiningredients,processing,packaging,handlingorstorage;b)orforselecting,trainingandmonitoringassessors.Twoformsofthemethodaredescribed:—theconstant-referencetechnique,usedwhenoneproductisfamiliartotheassessors(e.g.asamplefromregularproduction),and—thebalanced-referencetechnique,usedwhenoneproductisnotmorefamiliarthantheother.
